No Mother's Day brunch is complete without this famous champagne cocktail. Fresh orange juice and ice-cold champagne combine to form the perfect celebratory concoction. A few of these will dramatically enhance Mom's appreciation of your cooking skills!

Open-Face Smoked Salmon Bagel

If you can work a toaster, you can make this brunch classic. Most grocery stores sell pre-sliced smoked salmon, which makes this course a snap. Some toasted bagel halves, spread with cream cheese, and topped with a few slices of smoked salmon. Traditional garnishes (optional) include capers, red onions, and lemon.

Spring Asparagus and Bacon Frittata (Baked Asparagus Omelet)

Egg dishes are what usually mess up the novice cook trying to pull off a Mother's Day brunch. The poached eggs break, the fried eggs stick, the scrambled eggs turn out like rubber. The safest way to go is an Italian-style baked omelet called a "frittata. Easy and delicious!

Fresh Strawberry and Kiwi Cocktail with Cookies

This will be a fresh and colorful way to end your Mother's Day menu. There's no cooking involved, as fresh the strawberries and kiwi make their own sauce after you cut them up and add a little sugar. Serve these with a plate of assorted "fancy" cookies, such as Amaretto, biscotti, and ladyfingers.

Make sure you brew a pot of freshly ground coffee to go along with all this great food. No skim milk today - break out the half and half, along with some cocoa, and cinnamon, for that special coffee bar touch.
